We have started enjoying bircher muesli for breakfast. Its so simple (as long as I remember to make it the night before!). I love it as I set Abi up, and she feeds herself her breakie with minimal mess! A great recipe to share with the little ones, just choose the dried fruit etc. that you add – so that its suitable size etc. Enjoy!
2 cups of rolled oats
1 ¼ cup apple juice
1 cup of yoghurt
2 medium green apples (I often use red ones, as I have them in the house!)
¼ slivered almonds
1 cup dried fruit – sultanas, apricots, cranberries, etc
¼ cup shredded coconut
1 tsp ground cinnamon
Extra yoghurt – to serve
- Combine oats, juice and yoghurt in a medium bowl. Cover, and refrigerate overnight.
- The next morning – grate both apples (I choose not to peel them, suit yourself!). Stir apples into oats mixture with dried fruit, coconut and cinnamon. I usually put the slivered almonds into my serve – so that Abi doesn’t have to deal with the nuts!
