Enjoy these for breakfast or an afternoon snack… Try not to eat them all in one go though!
Ingredients:
- 3/4 cup of cooked, mashed sweet potato (Let cool before mixing with eggs)
- 1/2 cup of nut butter (I use peanut butter)
- 2 eggs
- 1 tsp vanilla extract
- 1 tsp chia seeds
- 2-3 tbsp Maple Syrup/Honey or Rice Syrup
- 1/2 cup pepitas or pumpkin seeds
- 1/4 cup oat flour (I made my own by throwing some oats into a food processor)
- 1 tsp baking soda
Method:
- Combine cooled off sweet potato, peanut butter and eggs in a large bowl and mix well
- add vanilla extract, cinnamon, maple syrup, chia seeds, pepita seeds and stir to combine
- add oat flour and baking soda
- scoop onto baking tray lined with baking paper (8-12 cookies)
- Bake at 375 degrees for 10 -12 minutes
